FEATURED RECIPE

A great summer pasta dish that only requires cooking the pasta. It tastes fresh and delicious but make sure you pick the best possible tomatoes, basil and olive oil.

PASTA WITH FRESH TOMATO SAUCE

3-4 Summer tomatoes (Heirloom tomatoes are great for this) coarsely chopped

1-2 cloves of garlic, minced

5 tbs balsamic vinegar

3 tbs extra virgin olive oil

1/4 cup fresh basil, thinly sliced

kosher salt and freshly ground pepper, to taste

1 lb pasta (spaghetti or penne work well)

Combine tomatoes, garlic, balsamic vinegar, olive oil, basil, salt and pepper in a large serving bowl. Let stand while you prepare the pasta or you can prepare it a few hours ahead and let stand at room temperature. Prepare pasta according to package directions. Drain and add to bowl with tomato mixture. Toss to combine. Serve immediately or at room temperature.
